I made this guacamole today, using two recipes from Chef Rick Bayless’s site.  First I made this raw tomatillo salsa, which was amazing by itself, then I mashed up some avocado and folded in some onions, and mixed in the salsa— a take on a guacamole recipe he had that called for mixing in his jarred version of tomatillo salsa he sells instead of the one I made. It was so good though.  You can’t go wrong following Rick Bayless’s recipes.
